Moisture Or Oysters

I thought I was over my cold, but apparantly not. My ears are plugged up and my hearing is off.

Case in point is the phone converstion between my daughter Wendy and me today:

Me: Hi, Wendy, How's everybody doing? Is your cold better? Mine is.

Wendy: Everybody's fine and I'm feeling much better. Glad to know you are better. Oh, before I forget, we have moisture in the basement and we're not sure what to do about it.

Me: Oysters in the basement?! You know I love raw oysters. I'll be right over with the coctail sauce.

Wendy: No, Mom. I said moisture. You know, like in damp. I thought you said your cold was better.

Me: Oh...moisture. I'll bring over the dehumidifier instead of the coctail sauce.

At this point, I can picture my daughter rolling her eyes as she completely changes the subject.

Wendy: Let's get our nails done this evening at the new nail spa.

Me: They're serving snails at the spa? I love escargot with garlic and butter.

Wendy: I think you need a nap, and have your ears cleaned out while your at it. I have to go now. Call me when you have your ears roto-rooted.

We finally decided that a dehumidifier for the basement was a good idea, and having our nails done will be a nice treat as soon as our colds are completely gone.

which part of hot curry did you not understand, hot oyster curry will clear that cold right up.
snail curry may be okay but i can't eat snails.

turtle curry may be something to try,
oh sorry got carried away there what were you on about again

i never thought people would ever ask me about my cooking skills but here goes (itsmecissy get you pen out you may find some flaws).

a basic chicken curry as made by me.

firstly you need a civilized curry powder or masala.
they come in mild, medium , hot and mother inlaws tongue (trust me its called that for a reason)

you need the following

rice (you can make that i'm sure unless you my mother and burn it everytime)

½ cup canola oil (i use olive)(I use about ¼ cup then add about ½ cup water when its cooking)
onions 1 (red or white )
1 teaspoon chopped garlic and ginger (fresh is good but you can buy the bottle stuff in the indian aisle of your local supper market)
1 chicken cut in pieces or 6 chicken breasts cubed (skinless / boneless if you into health stuff)
2 tomatoes
1/2 can tomato paste (at your local supper market)
cilantro (garnish)
basil (1 teaspoon)
salt (to taste)

now the curry powder must be red (not this yellow stuff you people down south call curry powder. now refer to note one.
i have all 4 types in there own container. i only use 1 teaspoon depending on the result. trying to take 2 teaspoons to make mild into medium and 4.3 into hot just don't work for me.
If you want bloody hot then 1 teaspoon on mother inlaw tongue
Or if you a weak coward then 1 teaspoon mild

If you are of the brave type then I would recommend 1 chopped green chili (jalapenos)

Heat the oil in a heavy based pan and cook the onions until they are golden brown. Add the spices, ginger, garlic and tomatoes and allow to simmer for five minutes. Add the chicken and season to taste and cook for 30 minutes stirring at intervals. When the chicken is nearly cooked add the frozen peas (i usually put in a cup of mixed veggies but then again your call) and simmer for 10 minutes. Garnish with cilantro and serve with rice

success is long term, failure the first time is mandatory.

i don't eat fish , highly allergic to all things sea food (crab,oysters, prawns, shrimp, lobster etc etc etc).
egg plant just sucks in so many ways.
SNAILs are you people out of your minds, if your food is walking snot then you need to find something else.
something else is not oysters.
i have tried snake, rat, rabbit, horse, crocodile but i will not try snail (i may take up drinking as a sport then who knows what i will try)

lightly: Thanks for the great recipe. I made a copy of it...can't wait to try it. Sorry to hear shellfish isn't your bag...it's so-o-o good.

Drinking IS a sport in Key West. There are at least 100 bars on Duval St. That's why they call it the "Duval Crawl".

i forgot one thing

the tomatoes must be grated into the curry

OK, I actually had to look this tomato grating thing up. Apparently it's very common in Greek cooking. Best tip I found is that you should cut the tomato across its width, not stem to bottom, then grate the meat side over a bowl or measuring cup. Don't grate the skin. What you're going for is the pulp. I was amazed!

Nice curry recipe. The only thing I'd change is instead of chicken breasts (what I usually eat also) I'd use thighs. Yes, it's fattier but it won't dry out as quickly as breasts. A good compromise would be to use a little of both. I just may have to try the version.
